We look at Al Andulas and we look at the Islamic influence and the Romance with which it is portrayed today, what many of us forget is Spain of 1492 was late medieval. My point, if you want to hear the music and eat the food from this period it still exists across the channel in Morocco. Music, people would classify today as North African or Arabic originated in Grenada and is very much part of our past .. one type is called Gharnati and one of the most famous exponents in recent times was a Jewish Moroccan lady called Zohra Al Fassiya. Schools that taught specific styles in Spain re opened in Morocco. My infamous recipe book written some 700 years in Spain reads more like a Mahgrebi Cook Book.In 16th Century Spain eating couscous was a sign that you were either Morisco or Jewish..
